I had seen this one-pan sandwich quite a bit and always thought I should make it, but I always forgot about it until one of the bloggers I followed posted it. I then pinned it and made it shortly after.
My first attempt was a huge fail/disaster. The bread did not flip together, as one. So I had to flip each piece separately, causing the egg to separate away from the bread and the egg was thin. It did not work at all like the videos I had seen. The sandwich tasted good, it just did not look pretty or work like it was suppose too. I so wanted this to work because it was a easy and simple way to enjoy a breakfast sandwich without a lot of work.
Therefore, I went into problem solving mode, I had to figure out what caused it to go wrong. At first I thought it was the bread, mine was a bit bigger than your typical sandwich bread. Then I remembered thinking I needed another egg after I added the bread as it did not look like enough egg. That made me question the size of my pan, maybe it was too big.
So I tried the sandwich again using a smaller pan and it worked! The key to getting this sandwich to work, is to use a nonstick pan that is not much bigger than your bread. If you have extra room around the bread in the pan the egg with spread out too much and the sandwich will not work like with my first attempt.
One Pan Breakfast Sandwich
Ingredients:
- 2 eggs
- black pepper, to taste
- 2 slices bread
- 2 slices cheese
- 2 slices turkey bacon, cooked
Directions:
- Heat a nonstick skillet, just big enough to fit both slices of bread, over medium-low heat. Spray with cooking spray.
- In a small bowl, beat the eggs and season with black pepper. Pour the eggs evenly across the preheated skillet.
- Immediately place a slice of bread into the eggs and then flip over. Repeat with the other slice of bread. Once the eggs are barley set, about 1-2 minutes, use a spatula to flip the eggs and both slices of bread over.
- Place both slices of cheese onto one slice of bread and then the bacon. Flip the egg hanging off the bread onto the bread. Flip the bread slice without the toppings onto the toppings. Continue to cook until the bottom slice is slightly browned. Carefully flip the sandwich over and cook until the cheese is melted and bread is slightly browned.
