Homemade mashed potatoes are mixed with broccoli and chicken and then sprinkled with plenty of bacon and cheese. Then baked in the oven for a creamy, delicious and filling dinner. I make lots of casserole, usually with pasta, sometimes with rice, but hardly ever with mashed potatoes. After this recipe I think I need to make some more mashed potato casseroles.
Baked Potato Chicken Broccoli Casserole
Ingredients:
- 3 pounds red potatoes, peeled and cut into 1 inch pieces
- 4 tablespoons butter, room temperature
- 1 cup sour cream
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 2-3 cups bite sized broccoli florets
- 3 cups cooked diced chicken breasts
- 4 slices turkey bacon, cooked and crumbled
- 8 ounces sharp cheddar cheese, shredded
Directions:
- Preheat the oven to 350º F. Grease a 2 quart casserole dish with cooking spray.
- Place the potatoes into a large pot and cover with water. Bring to a boil and cook until tender, about 10-15 minutes. Drain the potatoes and transfer them back into the hot pot.
- Meanwhile, steam the broccoli until tender crisp.
- With a potato masher, mash the potatoes until you reach your desired consistency. Add in the butter, sour cream, pepper, garlic and paprika, stirring to combine.
- Add the broccoli, chicken and 1 cup of shredded cheese to the mashed potatoes and stir until well combined. Transfer the mixture to the prepared casserole dish and sprinkle with the bacon and remaining cheese. Bake for 20-25 minutes or until the cheese has melted and the casserole is heated through.
Notes:
You do not have to peel the potatoes, but that is how my girls prefer it.
