I have been trying to add more protein into my diet and this chicken salad certainly makes it easy. The jalapeños add a bit of a crunch and spiciness to the chicken salad. I left the seeds in because I wanted the spiciness, but feel free to remove the seeds and membrane for a less spicy salad.
Jalapeño Popper Chicken Salad
Ingredients:
- 2 boneless skinless chicken breasts
- 5 slices turkey bacon
- 3 jalapeños
- 1/2 cup mayonnaise
- 1/4 cup green onions
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
Directions:
- Place the chicken breasts in a saucepan and cover with cold water, at least 1 inch of water. Bring to a boil, reduce the heat to a simmer and cover the saucepan with a lid. Simmer the chicken for 14 minutes or until completely cooked. Remove the chicken from the pan and allow to rest for a few minutes.
- Meanwhile cook the bacon your preferred way until crispy. Allow to cool and then crumble.
- Dice the jalapeños and chop the green onions.
- In a small bowl stir together the mayonnaise, green onions, onion powder and garlic powder.
- Using two forks shred the chicken and place into a bowl. Add in the mayonnaise mixture, diced jalapeños and crumbled bacon. Mix until everything is well combined.
