Peanut Butter and Jelly Granola Bars: Savory Sweet and Satisfying

 I used to make homemade granola bars and bites quite often, but life gets busy and making homemade snacks was just something I did not have time for anymore.

When making these bars you can use any flavor jelly, jam or preserve you desire. I used some leftover apricot jelly that I bought for a recipe and neither of my girls said they would use it, they did not really like it. So I figured it would work great in these bars.

I loved these bars, the apricot jelly was delicious and paired well with the peanut butter and granola. I am already thinking about what jelly I want to try next.

Peanut Butter and Jelly Granola Bars

Ingredients:

  • 2 cups quick oats
  • 1/4 cup whole wheat flour
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup + 2 tablespoons peanut butter
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/4 cup + 1 teaspoon honey
  • 8 ounces jelly, jam or preserve

Directions:

  1. Preheat the oven to 375º F. Line a 8x8 pan with aluminum foil and spray with non stick spray.
  2. In a large mixing bowl, add in the oats, flour, melted butter, 1/2 cup peanut butter, applesauce, vanilla and 1/4 cup honey. Mix well until completely mixed and it starts to form clumps.
  3. Place half of the mixture into the bottom of the prepared pan. Spread the mixture into an even layer and press the mixture down firmly.
  4. Spread the jelly evenly over the oat layer.
  5. Place the remaining oat mixture on top of the jelly and spread into an even layer. Press down firmly on the oat layer. The jelly does not have to be completely covered.
  6. Bake for 20-24 minutes for a soft and chewy bar or 26-30 minutes for a crunchier bar or until the top starts to brown and the edges are set.
  7. Remove from the oven and let cool for 5 minutes in the pan.
  8. Use the foil to lift out the bars and set aside to cool completely. 
  9. Once the bars have completely cooled, add the peanut butter and honey to a microwave safe bowl and heat in 30 second increments until melted.
  10. Drizzle the mixture on top of the bars and let set.
  11. Once the drizzle has set, cut into 8 bars. Store the bars in an airtight container.
