Pick your favorite cut of chicken, whip up a quick and easy marinade sauce, allow the marinade to do its job and then cook your preferred way.
I cooked this chicken in a skillet, but you could grill it as well. Just make sure to baste the chicken during the last 5 minutes of cooking with the delicious sauce.
Huli Huli Chicken
Ingredients:
- 1/2 cup brown sugar, packed
- 6 tablespoons ketchup
- 6 tablespoons low sodium soy sauce
- 2 1/2 tablespoons sherry
- 1/2 teaspoon ground ginger
- 1 1/2 teaspoons minced garlic
- 2 1/2 pounds boneless skinless chicken breasts
Directions:
- In a small bowl, mix together the sugar, ketchup, soy sauce, sherry, ginger and garlic. Reserve 1/2 cup of the sauce, cover and refrigerate.
- Add the chicken to a resealable bag and pour the marinade over top. Seal the bag and turn to coat the chicken. Refrigerate for at least 8 hours or overnight.
- Preheat a skillet over medium-high heat. Remove the chicken from the marinade and discard the marinade. Place the chicken into the skillet and cook for 6-8 minutes or until browned. Flip the chicken over and cook an additional 6-8 minutes or until the chicken is completely cooked.

Notes:
Chicken broth may be substituted for the sherry.
If the marinade is starting to burn, reduce the heat to medium and cook until completely cooked.
