Making stuffed chicken can be such a pain. Trying to cut a pocket in the chicken without going through either side of the chicken. Trying to make it in the middle so one side isn't too thin and the other too thick. Plus it takes the right chicken breast that is thick enough to make a pocket. That is why I do not make stuffed chicken too often and it takes a really delicious sounding recipe to convince me to give it a try. Well, this recipe did the trick.
Chicken stuffed with pepper jack cheese and chilies. Then sprinkled with creole or cajun seasoning and more pepper jack cheese and chilies. For a complete Mexican meal serve with fried rice and refried beans. Unfortunately my kids to not like either, maybe one of these days I will make them for myself with this chicken.
Green Chili and Cheese Chicken
Ingredients:
- 4 boneless skinless chicken breasts
- 6 ounces pepper jack cheese, shredded
- 4 ounce can diced green chilies, drained
- 1 tablespoon cajun or creole seasoning
Directions:
- Preheat the oven to 350º F. Spray a 9x13 inch baking dish with cooking spray.
- Cut a deep slit into the side of each chicken breast to form a pocket. Do not cut the whole side or cut all the way through to the other side of the chicken.
- Stuff a 1/4 cup of cheese and about 1 tablespoon of chilies into the pocket of each chicken breast. Using toothpicks, close the opening of the pocket to try and prevent the cheese from melting out in the oven.
- Place the chicken breasts into the prepared baking dish. Sprinkle the cajun or creole seasoning over top of the chicken, followed by the remaining cheese and chilies.
- Bake for 30 minutes or until the juice run clear and chicken in completely cooked.
