Half of my family is not a huge fan of ham. Even though they were not feeling this soup, they tried it and actually enjoyed it. They did say it would be better without the ham, but for the two of us that like ham we loved this soup and happily ate the leftovers.
Cheddar Ham Soup
Ingredients:
- 2 cups diced potatoes
- 2 cups water
- 1/2 cup sliced carrots
- 1/4 cup diced yellow onions
- 1/4 cup unsalted butter
- 1/4 cup all purpose flour
- 2 cups whole milk
- 1/4 teaspoon black pepper
- 8 ounces sharp cheddar cheese, shredded
- 1 1/2 cups cubed fully cooked ham
Directions:
- In a medium pot, add in the potatoes, water, carrots and onions. Bring the mixture to a boil over high heat. Cover the pot, reduce the heat to a simmer and cook until potatoes and carrots are tender, about 10-15 minutes.
- Meanwhile in large pot, melt the butter. Whisk in the flour until smooth. Slowly whisk in the milk. Add in the black pepper. Bring the mixture to a boil, while whisking constantly. Whisk constantly until the mixture has thickened, about 2 minutes. Add in the cheese and stir until melted.
- Stir in the undrained potatoes mixture and ham. Continue to heat until the ham is warmed.

Notes:
I left the skin on my potatoes, but if you prefer you can peel them before dicing.
