Naked Beef Burrito Skillet: Savory Sweet and Satisfying

This dish is not much too look. I know we eat with our eyes first and at first look, this dish looks like it will taste bland. But that is the exact opposite. This dish is flavorful and oh so delicious. Plus you can use your preferred ground meat and broth. I used ground turkey, because that is the ground meat I almost always use and I use beef broth because I had some leftover that I needed to use up. In fact I had the exact amount of leftover beef broth that I needed, I love it when things work out that way.

Naked Beef Burrito Skillet: Savory Sweet and Satisfying

Essentially what we have here is the insides of a burrito, which, in my opinion is the best part. Add a some rice and scoop it into a bowl and top it with your favorite toppings. I just used sour cream, because that is what I had on hand, but salsa, avocado, green onions, guacamole, would all work well as toppings.

Naked Turkey Burrito Skillet

Ingredients:

  • 1 pound ground turkey
  • 1 small yellow onion, diced
  • 1/2 large red bell pepper, diced
  • 1 large jalapeño, diced
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 1/4 cups low sodium beef broth
  • 2 cups cooked brown rice
  • 15 ounce can pinto beans, rinsed and drained
  • 4 ounces sharp cheddar cheese, shredded

Optional Toppings:

  • sour cream
  • salsa
  • avacado
  • guacamole
  • green onions
  • hot sauce

Directions:

  1. In a large deep skillet, over medium heat, add in the ground turkey, diced onion, red pepper and jalapeño. Using a spoon, break up the turkey as it cooks. Continue to cook until the turkey is completely cooked and vegetables are tender.
  2. Stir in the tomato paste, chili powder, cumin, garlic and onion powder, continue to stir and cook to 2 minutes.
  3. Stir in the cooked rice, beans and broth. Cook, stirring occasionally, until most of the broth has evaporated, but dish has some sauce to it.
  4. Stir in the cheddar cheese and continue to stir until completely melted.
