Cinnamon Banana Bread

Cinnamon Banana Bread: Savory Sweet and Satisfying

Moist banana bread with cinnamon flavor on the inside and a delicious sugar cinnamon crunch on the outside.  I have made breads with coatings on the outside before and the process has been a messy one and the coating didn't always stick well. The process for this coating, was so super easy and I love the crunch it gave the bread. This is all because the coating was added to the pan before the batter and then the remaining coating is sprinkled on top of the batter before cooking. This is why the coating has a nice crunch and sticks well, plus no mess involved getting the coating on.

Cinnamon Banana Bread

Ingredients:

Cinnamon Sugar Coating

  • 1/4 cup granulated sugar
  • 1/2 tablespoon ground cinnamon

Cinnamon Banana Bread

  • 1/2 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/2 cup sour cream
  • 1 cup mashed ripe banana, about 3 medium
  • 2 teaspoons ground cinnamon
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda

Directions:

  1. In a small bowl whisk together the sugar and cinnamon.
  2. Preheat the oven to 350º F. 
  3. Spray a 9x5 inch loaf pan with cooking spray. Sprinkle 1-2 tablespoons of cinnamon sugar into the pan. Tilt the pan around to coat the inside with the cinnamon sugar. 
  4. In a large bowl, using an electric mixer, beat the butter and sugar until light and fluffy.
  5. Add in the vanilla, eggs, sour cream and banana. Beat until well mixed.
  6. In another medium bowl, whisk together the cinnamon, flour and baking soda.
  7. Add the dry ingredients into the wet and stir until combined.
  8. Pour the batter into the prepared pan and gently spread into an even layer. Sprinkle the top of the batter with the remaining cinnamon sugar.
  9. Bake for 60-65 minutes or until and inserted toothpick comes out clean.
  10. Allow the bread to cool in the pan for 10-15 minutes. Remove the bread from the pan and place it onto a cooling rack and allow to cool completely before serving.
  11. Store any leftovers in an airtight container on the counter for a few days.
