I would never order a pizza from a pizza shop with chicken on it. It's pepperoni or sausage for me in terms of meat on pizza. But making a pizza at home is a different story, especially when that pizza has three different cheeses and pickled jalapeños. Since I like things spicy, I loaded my pizza with jalapeños, but you can add as many or as little as you would like.
Having previously lived in the Chicago area for 6 years, I was able to experience deep dish pizza for the first time and have it several others times while we lived there. I even made a homemade Chicago Style Deep Dish Pizza. However, I have come to realize I prefer thin crust pizza. So not only does this pizza satisfy my need for spicy things, but it has a thin crust.
Spicy Chicken and Jalapeño Pizza
Ingredients:
Pizza Dough
- 1/2 cup warm water (110º F)
- 1/2 teaspoon active dry yeast
- 1/4 teaspoon granulated sugar
- 1 1/2 cups all purpose flour
- 3/4 teaspoon salt
- 1 tablespoon olive oil
Spicy Chicken
- 1 boneless skinless chicken breast
- 3/4 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1-1 1/2 cups low sodium chicken broth
Toppings
- 1/2 cup pizza sauce
- 3 tablespoons grated parmesan cheese
- 4 ounces mozzarella cheese, shredded
- 2 ounces sharp cheddar cheese, shredded
- pickled jalapeños
- black pepper
Directions:
- In a glass measuring cup, combine the warm water, yeast and sugar. Allow the mixture to proof, until the yeast if foamy, about 5-10 minutes.
- In the bowl of a stand mixer, with the dough hook attached, combine the flour and salt. With the mixer running, pour in the yeast mixture and then the olive oil. Knead until a smooth ball forms and is slightly tacky to the touch.
- Transfer the dough to a lightly greased bowl and cover with a clean kitchen towel. Allow to rise in a warm location for 1 hour or until doubled in size.
- Slice the chicken breast in half horizontally. Add the chicken and all of the spices to a small saucepan. Add enough chicken broth to cover the chicken completely. Cook the chicken over medium heat until completely cooked. Remove the chicken and shred using two forks. Return the shredded chicken to the saucepan, continue to cook over medium heat until all of the liquid has been cook off.
- Preheat the oven to 425º F.
- Lightly grease a baking sheet or pizza pan with olive oil. Roll the dough out to desired shape and thickness. Place the dough onto the prepared baking sheet. Spread the pizza sauce over the dough leaving about an inch border around the edge without sauce. Sprinkle the parmesan cheese over the sauce followed by the shredded chicken. Sprinkle the mozzarella cheese and cheddar cheese over the chicken. Ad on desired amount of pickled jalapeños and sprinkle with ground black pepper, if desired.
- Bake for 18-22 minutes or until the dough has reached your desired crispiness.
