The original title of these pancakes was vanilla cinnamon buttermilk pancakes. I was typing up what I wanted to say about these pancakes and I dawned on me, I'm pretty sure all pancake recipes have vanilla in them. So I took a look at my Buttermilk Pancakes recipe and saw that it has the exact same amount of vanilla, so I decided to leave vanilla out of the title.
These fluffy pancakes have a hint of cinnamon. Top them with your favorite pancake topping for a delicious breakfast.
Cinnamon Buttermilk Pancakes
Ingredients:
- 2 cups all purpose flour
- 3 tablespoons granulated sugar
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 2 cups buttermilk
- 1 1/2 teaspoons vanilla extract
- 1/2 teaspoon ground cinnamon
- 2 eggs
- 1/4 cup unsalted butter, melted and cooled slightly
Directions:
- Preheat a skillet or griddle.
- In a large bowl, whisk together the flour, sugar, baking powder and baking soda until well combined.
- In a medium bowl, whisk together the buttermilk, vanilla, cinnamon and eggs until well combined. While whisking, drizzle in the melted butter.
- Pour the wet ingredients into the dry and whisk together until just combined.
- Melt a bit of butter onto the griddle or skillet.
- Using a 1/4 cup measuring scoop, pour the pancake batter onto the griddle or skillet. Cook for 2-3 minutes or until bubbles begin popping on the surface, the edges are set and the bottom is golden brown. Carefully flip the pancakes over and cook on the other side for 2-3 minutes or until the bottom is golden brown.
