Blackened Salmon Tacos: Savory Sweet and Satisfying

Every time we go to a Mexican restaurant my husband always orders fish tacos. If the restaurant does not have fish tacos he will not eat there. And by some twisted fate his favorite Mexican restaurant is not my favorite Mexican restaurant. My favorite does not even have fish tacos on the menu. Oh well, at least I can make fish tacos at home that both my fish lovers loved.

Blackened Salmon Tacos

Ingredients:

Avocado Broccoli Slaw

  • 2 medium avocados
  • 1 clove garlic, minced
  • 2 limes zested and juiced
  • 1/3 cup cilantro
  • 1 tablespoon olive oil
  • 1-2 tablespoons water
  • 12 ounces broccoli slaw

Salmon Tacos

  • 1 1/2 pounds salmon filets
  • 1/2 tablespoon onion powder
  • 3/4 teaspoon paprika
  • 3/4 teaspoon smoked paprika
  • 3/4 teaspoon dried thyme
  • 3/4 teaspoons dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground cayenne pepper
  • 2 teaspoons olive oil
  • 12 tortillas, fajita size
  • queso fresco
  • pickled jalapeño
  • lime, cut into 4 wedges

Directions:

Avocado Broccoli Slaw

  1. In a blender, add in the avocados, garlic, cilantro, lime zest and juice and olive oil. Blend until smooth. The dressing should be slightly thick and not runny, but if it is too thick add water a little bit at a time, until the right consistency is reached.
  2. To a large bowl, add the broccoli slaw and pour the dressing over top. Toss everything together until well mixed.

Salmon Tacos

  1. Preheat the oven to 400º F. Place a silpat on a baking sheet.
  2. In a small bowl, whisk together all of the spices.
  3. Brush both sides of the salmon filets with olive oil and then coat both sides with the seasoning mixture.
  4. Place the fish filets onto the prepared baking sheet and cook for 10-12 minutes or until the fish is opaque and fish flakes easily.
  5. Flake the fish and place some in to a tortilla along with some of the broccoli slaw, cheese and jalapeños. Squeeze a little lime juice over the top.
