You can serve these rolls by themselves for breakfast or as part of a brunch spread. Either way you serve, them they are worth the work and make breakfast delicious.
Breakfast Rolls
Ingredients:
- 1 cup warm water
- 1 tablespoon rapid rise yeast
- 1 tablespoon granulated sugar
- 1 tablespoon canola oil
- 1 teaspoon salt
- 2 1/2-3 cups all purpose flour
- 9 slices low sodium turkey bacon
- 6 breakfast sausage links
- 4 eggs, lightly beaten
- 2 tablespoons unsalted butter, melted
- 8 ounces cheddar jack cheese, shredded
Directions:
- In the bowl of a stand mixer, combine the water, yeast and sugar. Let it sit for 3-4 minutes or until the yeast is bubbling up.
- Add in the oil and the salt. With the dough hook attached, add in 2 1/2 cups flour and mix. Add in more flour as needed until the dough cleans the sides of the mixing bowl and is no longer sticky to the touch. Knead the dough for 3-4 minutes. Remove the dough and coat the bowl with cooking spray. Return the dough to the bowl and cover with a clean kitchen towel. Allow the dough to rise in a warm place for 15 minutes.
- Preheat the oven to 400º F. Spray a baking sheet with cooking spray.
- While the dough rises, cook the bacon and sausage. In a nonstick skillet, cook and scramble the eggs until just they are almost done.
- Sprinkle a clean counter with a little bit of flour. Punch down the dough and turn out onto the floured counter. Roll the dough into a large rectangle about 1/4 inch thick.
- Brush the dough with the melted butter then spread the eggs on top. Reserve 1/2 cup of cheese and sprinkle the remaining over the eggs. Crumble the bacon over top, chop the sausage into bite sized pieces and spread on top.
- Starting at one of the long sides, tightly roll the dough up. Pinch the seams closed at the end. With the seam side down, use a sharp knife to cut the dough into 1 1/2 inch pieces. This will make about 15 rolls.
- Place the rolls onto the prepared baking sheet. Bake for 12-14 minutes. Remove from the oven and sprinkle with the reserved 1/2 cup cheese. Bake for an additional 1-2 minutes. or until the cheese has melted and the dough is beginning to turn golden brown.
