Oh my goodness these tater tots are so addictively good! I could not stop eating them. The original recipe states this recipe serves 8, however, my family of 4 had these gone in one sitting.
When making these for the first time, I figured out a few things that helped me have better success the next time I made them. First off, I recommend measuring your bacon to see how much you will need to completely wrap the tater tot and cheese. The original recipe called for quartering the bacon, I used turkey bacon and needed half a piece per tater tot. Secondly, make sure your piece of cheese is not too big or or it will be hard to wrap. Also, if you freeze the cheese before wrapping it and try to wrap quickly to keep the cheese from thawing too much, the cheese will not melt and run out as much. Lastly, these do look like a mess when they are done baking because the brown sugar melts, but just make sure to use a silpat or parchment paper and clean up will be a breeze.
Bacon Wrapped Tater Tot Bombs
Ingredients:
- 1 ounce sharp cheddar cheese, about
- 8 slices low sodium turkey bacon
- 1/4 cup packed brown sugar
- 16 tater tots, thawed
Directions:
- Preheat the oven to 400º F. Line a baking sheet with parchment paper or a silpat.
- Cut the cheese into slices and then cut each slice into 1/4 inch squares. Freeze the cheese squares until frozen.
- Cut the bacon into pieces long enough to wrap around the tater tot and cheese. I needed to cut mine in half.
- Place the brown sugar into a shallow bowl.
- Wrap each tater tot and a piece of cheese in bacon.
- Coat the bacon in brown sugar pressing down lightly to help the brown sugar stick. Place the tots seam side down on the prepared baking sheet. Repeat with the remaining tater tots and bacon.
- Bake for 20-25 minutes, turning over halfway through the cooking time
