This chicken may not look that appetizing, but trust me it is. I thought I had a picture of it plated over noodles, but couldn’t find it on the camera. I always try and take a picture of the food as it looks when it is done cooking and then another picture of it plated. Some how I missed taking that second picture.
This chicken tastes delicious over noodles or rice with some sauce drizzled over top. It also happens to be one of the easiest chicken dishes I have ever made. You literally whisk the sauce together and pour it over the chicken and then bake it.
Maple Balsamic Chicken
Ingredients:
- 2 pounds boneless skinless chicken breasts
 - black pepper, to taste
 - 3/4 cup pure maple syrup
 - 3/4 cup dijon mustard
 - 3 tablespoons balsamic vinegar
 - 3/4 teaspoon dried rosemary
 - 1 1/2 teaspoon dried thyme
 
Directions:
- Preheat the oven to 425º F. Spray a 9x13 inch baking dish with cooking spray.
 - Place chicken into the prepared baking dish and season with black pepper.
 - In a medium bowl, whisk together the remaining ingredients. Pour over the chicken, making sure each piece of chicken is well coated.
 - Bake, uncovered, for 30-40 minutes or until the chicken is completely coated.
 - Serve the chicken over noodles or rice and spoon some sauce over top.

Basil and oregano make a great substitute for rosemary.
