Chocolate Chip Snowballs


I remember having these cookies as a kid. I also remember having a cookie like this but made with Kahlúa, called a Kahlúa ball. I also remember being in charge of making the Kahlúa balls one year and adding in a bit extra Kahlúa, man where those cookies strong, but good.
 

When I came across this recipe, I felt the need to make them and share this classic cookie with my kids, minus the Kahlúa of course. Thankfully they loved the cookies, because it made a lot of cookies!

Chocolate Chip Snowballs

Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all purpose flour
  • 1 cup mini chocolate chips
  • powdered sugar

Directions:

  1. Preheat oven to 375º F. Line two baking sheets with parchment paper.
  2. In the bowl of a stand mixer, add in the butter, 1/2 cup powdered sugar and vanilla. Beat until well combined and fluffy. 
  3. Add in the flour and mix until the dough comes together. Stir in the chocolate chips. If the dough is too soft, chill in the refrigerator until you can easily work it with your hands.
  4. Scoop out 1 tablespoon of dough and quickly roll the dough into a ball and place on prepared baking sheets. If you roll the dough for too long it will soften in the heat of your hands.
  5. Bake for 7-10 minutes or until the bottoms are slightly brown. 
  6. Remove the baking sheets and allow the cookies to cool for about 1 minute, until you can handle them. Fill a small bowl with powdered sugar and roll each cookie in the sugar until coated. Place the cookies onto a cooling rack and allow to cool completely. Once the cookies have completely cooled, you can roll them in more powdered sugar if desired.

Notes:
You can also make these cookies in a large bowl with an electric mixer.
