Sausage Oven Pancake Squares: Savory Sweet and Satisfying

Pancakes and sausage all in one convenient dish. The only problem I had with this breakfast was, no leftovers. But thankfully that is an easy fix, double the recipe and bake in a 9x13 inch baking dish.

The original recipe called for 12 ounces of sausage. I buy the sausage in a roll and it comes in a 16 ounce package. Since I didn’t want to measure out 12 ounces and have 4 leftover, I used the whole roll. My family loves sausage, so I wasn’t worried about the little bit extra.

Sausage Oven Pancake Squares

Ingredients:

  • 16 ounces breakfast sausage
  • 4 ounces sharp cheddar cheese, shredded
  • 1 egg
  • 1/4 cup milk
  • 2 tablespoons maple syrup
  • 1 tablespoon canola oil
  • 1/2 cup all purpose flour
  • 1 teaspoon baking powder

For Serving

  • maple syrup

Directions:

  1. Preheat the oven to 350º F. Lightly spray a 8 or 9 inch baking dish with cooking spray.
  2. In a skillet, over medium-high heat, cook and crumble the sausage. Drain the grease from pan and place the sausage onto a paper towel lined plate. 
  3. Spread the sausage into the bottom of a baking dish.
  4. Sprinkle the cheese over top of the sausage.
  5. In a large bowl, whisk together the eggs, milk, maple syrup and oil.
  6. Stir in the flour, stirring just until incorporated. Pour the batter evenly over the sausage and cheese.
  7. Bake for 25-30 minutes until golden brown.
  8. Top each serving with maple syrup, if desired.
