This chicken was such a good summer meal, the sweet pineapple with the barbecue sauce was a perfect combination. Plus it was easy to prepare and baked in the oven, requiring little hands on time. I served this with a make your own salad, per request of my oldest daughter. She loves to make her own salad from a variety of toppings.
Bacon Pineapple Barbecue Chicken
Ingredients:
- 4 boneless skinless chicken breasts
- 1 cup barbecue sauce
- 1 cup diced pineapple
- 6 strips bacon, cooked and crumbled
- 1/4 cup sliced red onion
- 4 ounces mozzarella cheese, shredded
- 2 green onions, sliced green parts only
Directions:
- Preheat the oven to 375º F.
- Place the chicken breast into a casserole dish and spread the barbecue sauce over top of the chicken.
- Place the diced pineapple on top followed by the bacon and then the red onions. Sprinkle the cheese on top.
- Bake, uncovered, for 25-30 minutes or until the chicken is completely cooked. If desired, place under the broiler for the last 4 minutes of the cooking time.
- Top with green onions before serving.
