Bacon Pineapple Barbecue Chicken: Savory Sweet and Satisfying

This chicken was such a good summer meal, the sweet pineapple with the barbecue sauce was a perfect combination. Plus it was easy to prepare and baked in the oven, requiring little hands on time. I served this with a make your own salad, per request of my oldest daughter. She loves to make her own salad from a variety of toppings.

Bacon Pineapple Barbecue Chicken

Ingredients:

  • 4 boneless skinless chicken breasts
  • 1 cup barbecue sauce
  • 1 cup diced pineapple
  • 6 strips bacon, cooked and crumbled
  • 1/4 cup sliced red onion
  • 4 ounces mozzarella cheese, shredded
  • 2 green onions, sliced green parts only

Directions:

  1. Preheat the oven to 375º F.
  2. Place the chicken breast into a casserole dish and spread the barbecue sauce over top of the chicken.
  3. Place the diced pineapple on top followed by the bacon and then the red onions. Sprinkle the cheese on top.
  4. Bake, uncovered, for 25-30 minutes or until the chicken is completely cooked. If desired, place under the broiler for the last 4 minutes of the cooking time.
  5. Top with green onions before serving.
