Chicken Fajita Casserole


Fajita's are always such a presentation at a Mexican restaurant. They come to your table sizzling hot and you get several dishes with all the fixings to create your own fajita. I've never had them at a Mexican place, if you've followed my blog for awhile you know I am a nacho girl and that is all I ever order. 


Making a version of fajita's at home was a delicious choice, well at least for my husband and I. Since I have two daughters that do not like peppers and one of them that doesn’t like rice, that just means more fajita casserole for us. I served this casserole over rice, but if you are following a specific diet, like Keto or low carb, this fajita casserole can be served as is, without any rice.

Chicken Fajita Casserole

Ingredients:

  • 1 tablespoon olive oil
  • 24-36 ounces boneless skinless chicken breasts, cut into 1-2 inch strips
  • 4 sweet bell peppers, various colors sliced
  • 1 small onion, sliced
  • 1 envelope taco seasoning
  • 1 cup sour cream
  • 4 ounces cream cheese, softened
  • 8 ounces cheddar cheese, shredded
  • cooked rice

Optional Toppings

  • sour cream
  • salsa
  • guacamole

Directions:

  1. Preheat oven to 350º F.
  2. In an oven safe skillet, heat the olive oil over medium heat. Add in the chicken and cook until browned, about 3-4 minutes. Flip the chicken over and cook on the other side until browned and completely cooked, about 3-4 minutes. Remove the chicken from the skillet and set aside.
  3. Add in the sliced peppers and onions and sauté until tender.
  4. Add the taco seasoning, sour cream and cream cheese to the skillet and stir until well mixed. Place the chicken back in the skillet and coat with sauce.
  5. Sprinkle the cheddar cheese over top and bake for 20 minutes or until the cheese is melted and bubbly.
  6. Serve over rice and top with toppings, if desired.

Notes:

If you do not have an oven safe skillet, transfer the mixture to an oven safe dish that has been sprayed with cooking spry, sprinkle with cheese and then bake.
