This barbecue chicken is so good. I never would have though about adding a spice rub to the chicken before adding the barbecue sauce, but what a difference it makes.
Sticky Oven Barbecue Chicken
Ingredients:
- 4 boneless skinless chicken breasts
- 4 teaspoons dark brown sugar
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 2/3 cup barbecue sauce
Directions:
- In a small bowl, whisk together all of the spices.
- Pat both sides of the chicken breasts dry with a paper towel and place on a plate or cutting board.
- Rub the tops and sides of each chicken breast with the spice mixture, pressing it into the chicken. Flip the chicken over and repeat on the bottom side. Use all of the spice mixture and rub it in well, the chicken will become sticky.
- Cover the chicken with plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 375º F. Line a rimmed baking sheet with aluminum foil.
- Remove the chicken from the refrigerator and place onto the prepared baking sheet. Bake for 10 minutes.
- Remove the chicken from the oven and brush a thin layer of barbecue sauce over the top and sides of the chicken. Return the chicken to the oven and bake for another 10 minutes.
- Remove the chicken from the oven and brush another thin layer of barbecue sauce over the top and sides of the chicken. Return the chicken to the oven and bake for another 10 minutes.
- Remove the chicken from the oven and allow to rest for 5 minutes before serving.
