Cheesy Sausage and Rice Skillet


Who doesn't love and easy dinner? After a long day at work the last thing I want to do is come home and spend a ton of time in the kitchen cooking dinner. Oh and then have to clean it all up. This dinner solves those problems. It is super easy to prepare and cooked all in one skillet.


I use brown rice in almost all of my recipes that call for rice. Since brown rice takes a bit longer to cook than white rice, this dinner takes over 30 minutes to be ready. But if you were to use white rice, it would be ready in about 30 minutes.

Cheesy Sausage and Rice Skillet

Ingredients:

  • 14 ounces smoked sausage, sliced
  • 10 ounce can diced tomatoes with chilies
  • 1 1/2 cups brown rice
  • 2 1/2 cups chicken stock
  • 4 tablespoons unsalted butter, cut into 1 tablespoon pieces
  • black pepper, to taste
  • 4 ounces colby jack cheese, shredded

Directions:

  1. In a large skillet, over medium-high heat, cook the sausage until browned on both sides.
  2. Add in the tomatoes, rice, butter and chicken stock. Season with black pepper.
  3. Bring the mixture to a boil, cover and reduce the heat to a simmer. Cook until the rice is tender and has absorbed all of the liquid, about 40-45 minutes.
  4. Remove the skillet from the heat and remove the lid. Sprinkle the cheese on top and stir until the cheese is melted and mixed in.
