I love my coffee and anything related to coffee. If I see a recipe that has mocha, coffee or anything related to coffee in the title, I am definitely checking out that recipe.
Most coffee recipes I come across call for instant coffee, which I always substitute with espresso powder. But this recipe calls for actual brewed coffee, both in the doughnuts and in the glaze. I used my Keurig on the strong brew feature and brewed the smallest cup size which is 1/2 cup. That will give you what you need for these doughnuts and glaze with just a smidge leftover.
Eating one or two of these doughnuts is a pretty good way to start my day.
Mocha Chocolate Chip Doughnuts
Ingredients:
Doughnuts
- 1/2 cup unsalted butter, softened
- 1/3 cup brown sugar
- 1/3 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 2/3 cup non-fat Greek yogurt
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 2 1/2 cups all purpose flour
- 1/3 cup strong brewed coffee, cooled
- 1 cup mini chocolate chips
Glaze
Directions:
Doughnuts
- Preheat the oven 375º F. Grease three doughnuts pans with cooking spray.
- In a large bowl, beat the butter and both sugars together until light and fluffy.
- Add in the egg, vanilla and yogurt. Beat until well mixed.
- In a medium bowl, sift together the baking powder, baking soda and flour.
- Slowly beat in half of the flour mixture, followed by all of the coffee and then the remaining flour mixture.
- With a spoon or spatula, gently stir in the mini chocolate chips.
- Spoon the batter into the doughnut pans, filling the cavities 3/4 full.
- Bake for 10 minutes or until an inserted toothpick comes out clean.
- Allow the doughnuts to cool in the pan for 2 minutes before removing them to a cooling rack to cool completely.
Glaze
- In a medium bowl, whisk together the powdered sugar and cooled coffee.
- Dip the tops of the cooled doughnuts into the glaze or spread the glaze on with a knife.
- Allow the glaze to set before eating.

Notes:
If you do not have three doughnut pans, you can use what you have and then after removing the doughnuts fill the pan again.
