Baked Chicken Spaghetti: Savory Sweet and Satisfying

I have come to learn I like baked spaghetti better than just stove top. I also like trying new recipes and baked chicken spaghetti seemed like a new and tasty twist on baked spaghetti.

Just looking at the ingredients I knew this spaghetti had the potential to be delicious. I was just not prepared for how creamy and delicious it would be. So much so that I had to come back for a little bit more and couldn't wait for the leftovers on another night.

Baked Chicken Spaghetti

Ingredients:

  • 16 ounces spaghetti noodles
  • 1 pound bacon
  • 5 tablespoons unsalted butter, melted and slightly cooled
  • 2 eggs
  • 1/3 cup grated parmesan cheese
  • 8 ounces cream cheese, softened
  • 2- 10 1/2 ounce cans cream of chicken soup
  • 1 cup sour cream
  • 2 cups cooked shredded chicken
  • 8 ounces mozzarella cheese, shredded
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder

Directions:

  1. Preheat the oven to 350º F. Lightly spray a 9x13 inch baking dish with cooking spray.
  2. Cook the spaghetti according to the package directions until al dente. Drain the noodles well and return to the pot.
  3. While the pasta cooks, in a large skillet, over medium-high heat, cook the bacon until crispy. Place the bacon on a paper towel lined plate and allow to cool before crumbling.
  4. In a small bowl, whisk together the melted butter, eggs and parmesan cheese. Pour over the spaghetti and toss to coat.
  5. In a large bowl, mix the cream cheese, chicken soup, sour cream, shredded chicken, 1/2 of the mozzarella cheese, bacon, Italian seasoning, garlic powder, black pepper and onion powder.
  6. Transfer 1/2 of the spaghetti into the prepared baking dish, top with half of the cheese and chicken mixture. Repeat these layers one more time. Sprinkle the remaining mozzarella cheese on top. 
  7. Bake for 30-45 minutes or until hot and bubbly.
