I am always on the lookout for side dishes, especially quick and easy ones. Unfortunately this potato dish does not qualify as quick, but it is fairly easy, it just takes a bit of time, although most of that time is cooking time and cooling time. And that time can be broken up into two days or started in the morning and finished for dinner.
The first part, which takes the most time, is just baking the potatoes and then cooling them. The second part is where you assemble that casserole and then bake. All in all not too much work for a delicious dish.
Steakhouse Potatoes Romanoff
Ingredients:
- 3 large russet potatoes
- 1 teaspoon unsalted butter
- 1/2 teaspoon ground black pepper
- pinch cayenne pepper
- 2 1/2 cups shredded sharp white cheddar cheese
- 1 3/4 cup sour cream
Directions:
- Preheat the oven to 400º F.
- Rinse and scrub the potatoes and then pat dry with paper towel.
- Using a fork poke holes in the potatoes and wrap in aluminum foil.
- Bake until the potatoes are very tender and can be easily pierced by a knife, about 1 hour and 15 minutes.
- Allow the potatoes to cool to room temperature, about 20 minutes.
- Remove the aluminum foil from the potatoes and then wrap the potatoes in plastic wrap. Refrigerate until completely chilled, about 8 hours or overnight.
- Preheat the oven to 425º F. Spread the butter onto the bottom and up the sides of a 9x13 inch baking dish.
- Using a cheese grated, shred the potatoes, skin included, into a large bowl.
- Season the potatoes with black pepper and cayenne pepper. Toss with two forks until well combined.
- Add in the shredded cheese, and toss with two forks to mix well. Add in the sour cream and toss with two forks just until barely combined.
- Transfer the mixture to the prepared baking dish and gently pat down into an even layer.
- Bake for 30-35 minutes or until the top is starting to brown.
