These English muffins take the biscuits and gravy to the next level. When it comes to biscuits and gravy I've always liked the sausage gravy, but the biscuits can sometimes not be the best. With this breakfast, I get the delicious sausage gravy but instead of biscuits I have the always delicious English muffin. Add in some scrambled eggs and you have a deliciously filling breakfast.
English Muffin Breakfast Pizza
Ingredients:
- 1 pound breakfast sausage
- 1/4 cup sausage drippings
- 1/4 cup all purpose flour
- 1/4 teaspoon black pepper
- 6 English Muffins, split in half
- 8 eggs
- splash milk
- black pepper, to taste
- 2 tablespoons unsalted butter
- 12 thin cheddar cheese slices
Directions:
- In a large skillet, over medium heat, cook the sausage until cooked and crumbled. Remove all of the grease except for 1/4 cup.
- Sprinkle the flour over the sausage and stir to mix. Cook and stir for about 3-5 minutes.
- Slowly add in the milk while stirring constantly. Continue to stir constantly for about 1 minute.
- Stir in the black pepper and bring the mixture just to a boil.
- Once it reaches a boil, reduce the heat to low and cook, stirring often, until the gravy has thickened.
- While cooking the gravy, lightly toast the english muffins and place on a baking sheet, cut side facing up.
- In a medium bowl, whisk the eggs together. Add in a splash of milk and desired amount of black pepper, whisk to incorporate.
- In a non stick skillet, over medium-low heat, melt the butter. Pour the eggs into the skillet, let the eggs cook for 1-2 minutes without stirring. Once the eggs have set a bit, stir them one time and let the eggs cook for 1 minute without stirring. Continue this process until the eggs are cooked to your liking.
- Turn the oven broiler on to high.
- Top each english muffins with some sausage gravy, followed by some scrambled eggs and then a slice of cheese.
- Place the baking sheet under the broil and broil until the cheese has melted.

Notes:
To toast the English muffins you can do it in a toaster, use the broiler on the oven (it will only take a few minutes this way) or preheat the oven to 350º F and bake for about 5 minutes. I used a toaster, it was easy that way and I did not hav to worry about them burning in the oven.
