This ice cream seriously tastes just like a toasted marshmallow. I was a little surprised at how much it really tastes like a toasted marshmallow. The process of getting the toasted marshmallows into the ice cream base is a bit messy, but so worth it.
Toasted Marshmallow Ice Cream
Ingredients:
- 10 ounce bag regular sized marshmallows
- 2/3 cup granulated sugar
- 1 2/3 cup half and half
- 1 1/2 cups heavy whipping cream
- 2 teaspoons vanilla extract
Directions:
- Preheat oven to 350º F.
- Line a baking sheet with parchment paper or a silpat and place the marshmallows on top.
- Place the baking sheet onto a rack in the middle of the oven. Allow to bake for 3-4 minutes.
- Turn on the broiler and move the baking sheet to the top rack under to broiler and broil for 2-3 minutes or until browned.
- In a blender, add in the granulated sugar and half and half. Blend for a few seconds.
- Add the toasted marshmallows to the blender and blend until smooth.
- Transfer the mixture to a medium bowl and stir in the heavy cream and vanilla. Stir until well mixed.
- Cover the bowl and refrigerate until cold, about 4-6 hours or overnight.
- Stir the ice cream base well and pour the mixture into the ice cream machine. Churn according to the manufactures directions.
- Remove the container from the freezer and transfer the ice cream into it.
- Cover the container and place in the freezer.
