Buffalo Chicken Totchos: Savory Sweet and Satisfying

Ever since I first had totchos, I've been on the look out for other varieties. I couldn't think of a better variety then this one for my second one.

Buffalo Chicken Totchos: Savory Sweet and Satisfying

Shredded chicken seasoned with buffalo sauce on top of crispy tater tots and then topped with a homemade cheese sauce, bacon and ranch dressing, so delicious! I have served this as a snack but also as one of those comfort dinners. Sometimes if I have green onions on hand I will add them.

Buffalo Chicken Totchos

Ingredients:

  • 2 pounds frozen tater tots

Buffalo Chicken

  • 2 1/2 cups shredded boneless skinless chicken breasts
  • black pepper, to taste
  • 3/4 cup buffalo sauce
  • 2 green onions, sliced

Cheese Sauce

  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 tablespoon cornstarch
  • 1 cup evaporated milk
  • 1 tablespoon buffalo sauce

Toppings

  • black pepper, to taste
  • 6 slices bacon, cooked and crumbled
  • 1/4 cup ranch dressing
  • 1 green onion, sliced

Directions:

  1. Preheat the oven to 425º F.
  2. Place the tater tots on a baking sheet, just big enough for the tater tots to spread out in a single layer. Bake the tater tots according to the package directions, about 20-25 minutes, flipping halfway through the cooking time.
  3. Meanwhile, in a large bowl, add in the chicken and season lightly with black pepper. Stir in the buffalo sauce and green onions. Keep the buffalo chicken warm.
  4. In a medium pot, combine the cheese cornstarch until well mixed. Stir in the evaporated milk and buffalo sauce.
  5. Heat the mixture over medium heat, bringing it to a simmer stirring constantly until the cheese has melted and sauce has thickened, about 5-8 minutes.
  6. Reduce the heat to low and keep the mixture warm, stirring occasionally.
  7. Once the tater tots are crispy and lightly brown remove them from the oven and lightly season with black pepper.
  8. Evenly pour the cheese sauce over top of the tater tots, followed by the buffalo chicken.
  9. Top with the bacon, ranch dressing, a drizzle of buffalo sauce and green onions.
