Ever since I first had totchos, I've been on the look out for other varieties. I couldn't think of a better variety then this one for my second one.
Shredded chicken seasoned with buffalo sauce on top of crispy tater tots and then topped with a homemade cheese sauce, bacon and ranch dressing, so delicious! I have served this as a snack but also as one of those comfort dinners. Sometimes if I have green onions on hand I will add them.
Buffalo Chicken Totchos
Ingredients:
- 2 pounds frozen tater tots
 
Buffalo Chicken
- 2 1/2 cups shredded boneless skinless chicken breasts
 - black pepper, to taste
 - 3/4 cup buffalo sauce
 - 2 green onions, sliced
 
Cheese Sauce
- 1 1/2 cups shredded sharp cheddar cheese
 - 1 tablespoon cornstarch
 - 1 cup evaporated milk
 - 1 tablespoon buffalo sauce
 
Toppings
- black pepper, to taste
 - 6 slices bacon, cooked and crumbled
 - 1/4 cup ranch dressing
 - 1 green onion, sliced
 
Directions:
- Preheat the oven to 425º F.
 - Place the tater tots on a baking sheet, just big enough for the tater tots to spread out in a single layer. Bake the tater tots according to the package directions, about 20-25 minutes, flipping halfway through the cooking time.
 - Meanwhile, in a large bowl, add in the chicken and season lightly with black pepper. Stir in the buffalo sauce and green onions. Keep the buffalo chicken warm.
 - In a medium pot, combine the cheese cornstarch until well mixed. Stir in the evaporated milk and buffalo sauce.
 - Heat the mixture over medium heat, bringing it to a simmer stirring constantly until the cheese has melted and sauce has thickened, about 5-8 minutes.
 - Reduce the heat to low and keep the mixture warm, stirring occasionally.
 - Once the tater tots are crispy and lightly brown remove them from the oven and lightly season with black pepper.
 - Evenly pour the cheese sauce over top of the tater tots, followed by the buffalo chicken.
 - Top with the bacon, ranch dressing, a drizzle of buffalo sauce and green onions.
