This pancake takes the classic and delicious chocolate chip pancake and adds some nutritious bananas to the mix. Plus it is a great way to use up the ripe bananas that I always seem to have and nobody will eat.
Banana Chocolate Chip Pancakes
Ingredients:
- 1 1/2 very ripe bananas
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup milk
- 1/2 teaspoon white vinegar
- 2 tablespoon canola oil
- 1 1/2 cups all purpose flour
- 1 tablespoon granulated sugar
- 2 teaspoons baking powder
- mini chocolate chips
Directions:
- Preheat a griddle over medium to medium-low heat.
- In a large bowl mash the bananas well. Whisk in the egg, vanilla, milk, vinegar and oil.
- Add in the flour, sugar and baking powder. Whisk until the batter is mostly smooth with just a few lumps.
- Lightly grease the griddle and pour 1/4 cup of the batter onto the hot griddle. If needed spread the batter into a circle, about 4 inches. Sprinkle the top of the pancake with mini chocolate chips. Cook until the bottom of the pancake is golden brown and bubbles start to form and pop on top of the pancake. Flip the pancake over and cook on the other side until golden brown.
- Continue this process with the remaining batter.
