Toasted Almond Chicken


Less than 30 minutes and this delicious and flavorful chicken will be on the table ready to eat.  If you choose to serve this chicken over brown rice, dinner won't quite be ready in under 30 minutes, since brown rice takes long to cook.

Toasted Almond Chicken

Ingredients:

  • 4 boneless skinless chicken breasts
  • 1/4 teaspoon black pepper
  • 3 tablespoons unsalted butter
  • 1 1/2 cups heavy whipping cream
  • 2 tablespoons orange marmalade
  • 1 tablespoon dijon mustard
  • 3/4 cup chopped almonds, toasted
  • cooked rice

Directions:

  1. Season both sides of the chicken with black pepper.
  2. In a large skillet, over medium-high heat, melt the butter.
  3. Add in the chicken and cook for about 5-7 minutes, flip the chicken over and cook for 5-7 minutes on the other side.
  4. Remove the chicken and set aside.
  5. Reduce the heat to medium and add in the whipping cream, marmalade and mustard, stir to mix well.
  6. Add the chicken back in and sprinkle the almonds on top. Cook for 8 minutes or until the sauce has thickened.
  7. Serve over rice.

My chicken breasts were quite large, about 10 ounces a piece so I made this 8 servings.
