Eggnog Waffles

Egg Nog Waffles: Savory Sweet and Satisfying

My family loved these waffles and the great egg nog flavor they have, well except my oldest, who prefers pancakes. She said they would taste better as pancakes, oh my pancake loving girl. I guess I will have to make her a batch of my Egg Nog Pancakes with Cranberry Orange Syrup.

Eggnog Waffles

Ingredients:

  • 1 1/2 cups all purpose flour
  • 1/2 cup corn starch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 4 teaspoon granulated sugar
  • 2 cups eggnog
  • 2/3 cup canola oil
  • 2 eggs
  • 2 teaspoons vanilla extract

Directions:

  1. In a medium bowl, whisk together the flour corn starch, baking powder, baking soda and sugar.
  2. In large bowl, whisk together the eggnog, oil, eggs and vanilla.
  3. Add the dry ingredients to the wet ingredients and whisk just until combined with a few lumps remaining. Set aside and let rest for 30 minutes.
  4. Preheat the waffle iron.
  5. Fill the waffle iron and cook the waffles according to the manufacturer's instructions, cooking until crisp and golden on the outside.

Notes:
I got about 5 Belgian waffles out of this batter.
