Pumpkin Spice Waffles

Pumpkin Spice Waffles: Savory Sweet and Satisfying

Several years ago I made these Pumpkin Pancakes with Apple Cider Syrup. I figured it was about time to make some pumpkin waffles for the waffles lovers in the family. These waffles have all the essential qualities a waffles should have, like crispy outside and soft and fluffy inside with the added goodness of pumpkin flavor.

Pumpkin Spice Waffles

Ingredients:

  • 1 3/4 cups all purpose flour
  • 2 teaspoons brown sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • 1 1/4 cups buttermilk
  • 1 cup canned pumpkin puree
  • 2 eggs
  • 1/4 cup unsalted butter, melted

Directions:

  1. Preheat the waffle iron and lightly spray with cooking spray.
  2. In a large bowl whisk together the flour, sugar, baking powder, baking soda and pumpkin pie spice.
  3. In another large bowl whisk together the buttermilk, pumpkin puree, eggs and butter.
  4. Pour the wet mixture over the dry mixture and stir together with a rubber spatula, just until everything is combined, but still slightly lumpy.
  5. Pour amount of batter recommended by your waffle maker into the hot waffle iron and cook for 4-5 minutes or until waffle is crispy on the outside and soft and fluffy on the inside.
