Several years ago I made these Pumpkin Pancakes with Apple Cider Syrup. I figured it was about time to make some pumpkin waffles for the waffles lovers in the family. These waffles have all the essential qualities a waffles should have, like crispy outside and soft and fluffy inside with the added goodness of pumpkin flavor.
Pumpkin Spice Waffles
Ingredients:
- 1 3/4 cups all purpose flour
- 2 teaspoons brown sugar
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 teaspoon pumpkin pie spice
- 1 1/4 cups buttermilk
- 1 cup canned pumpkin puree
- 2 eggs
- 1/4 cup unsalted butter, melted
Directions:
- Preheat the waffle iron and lightly spray with cooking spray.
- In a large bowl whisk together the flour, sugar, baking powder, baking soda and pumpkin pie spice.
- In another large bowl whisk together the buttermilk, pumpkin puree, eggs and butter.
- Pour the wet mixture over the dry mixture and stir together with a rubber spatula, just until everything is combined, but still slightly lumpy.
- Pour amount of batter recommended by your waffle maker into the hot waffle iron and cook for 4-5 minutes or until waffle is crispy on the outside and soft and fluffy on the inside.
Notes:
I got 3 Belgium waffles out of this recipe.
