There is nothing better than a waffle that is crispy on the outside and fluffy on the inside. These waffles are exactly that with a delicious banana flavor.
Banana Waffles
Ingredients:
- 2 cups all purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 cup cornstarch
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 2 tablespoons brown sugar
- 2 eggs
- 2 tablespoons canola oil
- 3/4 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 cups mashed banana, about 3 medium
Directions:
- In a large bowl whisk together the the flour, baking powder, baking soda, cornstarch, cinnamon, nutmeg and brown sugar. Create a well in the middle.
- To the well in the dry ingredients, add in the eggs, oil, milk, vanilla extract and mashed bananas. Stir just until combined.
- Let the batter rest for 10 minutes while you preheat the waffle iron.
- Add the amount batter and cook according to the manufacturer’s instructions.
