Banana Waffles

There is nothing better than a waffle that is crispy on the outside and fluffy on the inside. These waffles are exactly that with a delicious banana flavor. 

Banana Waffles

Ingredients:

  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 cup cornstarch
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 2 tablespoons brown sugar
  • 2 eggs
  • 2 tablespoons canola oil
  • 3/4 cup milk
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed banana, about 3 medium

Directions:

  1. In a large bowl whisk together the the flour, baking powder, baking soda, cornstarch, cinnamon, nutmeg and brown sugar. Create a well in the middle.
  2. To the well in the dry ingredients, add in the eggs, oil, milk, vanilla extract and mashed bananas. Stir just until combined.
  3. Let the batter rest for 10 minutes while you preheat the waffle iron.
  4. Add the amount batter and cook according to the manufacturer’s instructions.
