Key Lime Curd


Key Lime Curd: Savory Sweet and Satisfying

The only reason I made this curd, was for a pie I was making and I needed key lime curd (check back tomorrow to see the pie I made). After I transferred the curd to a container to cool, I licked the spoon and I couldn't believe what I was tasting. This key lime curd was beyond amazing. I wanted to dig right in and eat a whole spoonful. But knowing I needed it for the pie I resisted, but that did not stop me from thinking about all the ways I could use this key lime curd. I will have to make another batch very soon.

I have to say this key lime curd is way better than lemon curd. I know I may be partial since I love the key lime flavor so much, but this sweet and tart curd has the best citrus flavor.

Key Lime Curd

Ingredients:

  • 3 eggs
  • 3/4 cup granulated sugar
  • 1/4 cup key lime juice
  • 1 teaspoon key lime zest
  • 4 tablespoons unsalted butter

Directions:

  1. In a medium saucepan, whisk together the eggs and sugar until well combined.
  2. Whisk in the key lime juice and zest.
  3. Place the saucepan over medium-low heat and whisk constantly and quickly until the mixture is completely warmed through.
  4. Stir the butter in a little piece at a time, about 1/4-1/2 tablespoon. Continue stirring until each piece has melted and is completely incorporated with the mixture being smooth before adding another piece of butter.
  5. Continue to cook and stir the curd until it begins to thicken and coats the back of the spoon.
  6. Pour the curd through a fine mesh sieve into a container with a tight fitting lid.
  7. Seal the container and refrigerate until cold.

Notes:
I used bottled key lime juice and lime zest.

I added a little food coloring to this curd because I wanted to make sure it would be a different color than the pie I was going to use this for so there would be a contrast between the layers, otherwise I would not have added any food coloring.

This recipe can be doubled if you want more of this delicious curd.
