I like beef stroganoff, my mom used to make it occasionally when I was growing up. I have made a take on beef stroganoff when I made Stroganoff Spaghetti and Meatballs. But I have never made beef stroganoff, since we don't eat a lot of red meat. I have always thought about just swapping out the ground beef for ground turkey like I normally do, but then it would technically not be beef stroganoff.
So when I happened upon this baked ground beef stroganoff casserole topped with cheese I decided to take the plunge and make it a ground turkey stroganoff.
It turned out delicious! It was creamy and flavorful like stroganoff is suppose to be and we all love the addition of the cheese on top.
You can make this with ground turkey or you can make it more traditional and use ground beef instead, but either way you decided to make it, it is worth making.
Ground Turkey Stroganoff Casserole
Ingredients:
- 8 ounces egg noodles, uncooked
- 1 pound ground turkey
- black pepper, to taste
- 1 medium yellow onion, finely diced
- 2 cloves garlic, minced
- 3 tablespoons unsalted butter
- 2 tablespoons all purpose flour
- 2 1/2 cups low sodium beef broth
- 3/4 cup sour cream
- 1 tablespoon dijon mustard
- 1 3/4 cups shedded cheddar cheese
Directions:
- Prepare the noodles according to the package directions, cooking the noodles for 1 minute less than recommended shortest time.
- Preheat the oven to 375º F. Lightly spray a 9x13 inch baking dish with cooking spray.
- In a large skillet, over medium-high heat, cook the ground turkey and onions until the onions are soft and the ground turkey is completely cooked. Season with black pepper.
- Add in the minced garlic and cook for 1 minute, stirring constantly. Transfer the turkey to a bowl and set aside.
- In the same skillet, add in the butter and allow it to melt.
- Whisk in the flour and cook for 1 minutes, stirring constantly.
- Slowly add in the beef broth while whisking constantly.
- Stir in the sour cream, mustard and 3/4 cup cheese. Keep stirring until well combined. Allow the mixture to simmer for 3-5 minutes or until thickened, stirring often.
- Add the ground beef and noodles to the mixture and stir until well combined.
- Transfer the mixture to the prepared baking dish and top with the remaining 1 cup cheese.
- Bake for 15-20 minutes or until the cheese is melted and casserole is hot.
