Raspberry Banana Bread

Raspberry Banana Bread: Savory Sweet and Satisfying

My freezer almost always has frozen bananas in it and when I saw some overripe bananas on the counter I knew I needed to make some banana bread as soon as possible. I did not want any more bananas in my freezer. I am so glad that I had those overripe bananas, because this bread is so delicious. Raspberries and chocolate chips pair so well together in this moist banana bread.

Raspberry Banana Bread

Ingredients:

  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/3 cup granulated sugar
  • 1/4 cup canola oil
  • 1/4 cup non-fat Greek yogurt
  • 2 eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/4 cups mashed ripe bananas, about 3 bananas
  • 1 cup fresh or frozen raspberries
  • 1/2 cup mini chocolate chips

Directions:

  1. Preheat the oven to 350º F. Line a 9x5 inch loaf pan with parchment paper and lightly spray with cooking spray.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon and nutmeg.
  3. In a large bowl, whisk together the sugar, oil, Greek yogurt, eggs and vanilla until well combined. Stir in the mashed bananas.
  4. Add the dry ingredients into the wet and stir just until combined.
  5. Gently fold in the raspberries and chocolate chips.
  6. Pour the batter into the prepared loaf pan and using a spatula smooth the top into an even layer.
  7. Bake for 1 hour or until an inserted toothpick comes out clean.
  8. Allow the bread to cool for 15 minutes in the pan, then remove from the pan and transfer to a cooling rack and allow to cool completely before cutting and serving.
