My freezer almost always has frozen bananas in it and when I saw some overripe bananas on the counter I knew I needed to make some banana bread as soon as possible. I did not want any more bananas in my freezer. I am so glad that I had those overripe bananas, because this bread is so delicious. Raspberries and chocolate chips pair so well together in this moist banana bread.
Raspberry Banana Bread
Ingredients:
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/3 cup granulated sugar
- 1/4 cup canola oil
- 1/4 cup non-fat Greek yogurt
- 2 eggs, room temperature
- 1 teaspoon vanilla extract
- 1 1/4 cups mashed ripe bananas, about 3 bananas
- 1 cup fresh or frozen raspberries
- 1/2 cup mini chocolate chips
Directions:
- Preheat the oven to 350º F. Line a 9x5 inch loaf pan with parchment paper and lightly spray with cooking spray.
- In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon and nutmeg.
- In a large bowl, whisk together the sugar, oil, Greek yogurt, eggs and vanilla until well combined. Stir in the mashed bananas.
- Add the dry ingredients into the wet and stir just until combined.
- Gently fold in the raspberries and chocolate chips.
- Pour the batter into the prepared loaf pan and using a spatula smooth the top into an even layer.
- Bake for 1 hour or until an inserted toothpick comes out clean.
- Allow the bread to cool for 15 minutes in the pan, then remove from the pan and transfer to a cooling rack and allow to cool completely before cutting and serving.
