Fritos Taco Bowl

Fritos Taco Bowl: Savory Sweet and Satisfying

This taco bowl is layers of deliciousness. Fritos are topped with rice and then a mixture of meat beans and tomatoes, followed by some cheese. The salty, crispy Fritos make this dish, plus having the rice in this dish did not make me feel so bad about eating the Fritos.

This dish can be made either in the crock pot or on the stove top, which gives you options based on your schedule and the amount of time you have. 

I topped the bowls with cheese but you could also add sour cream, taco sauce or salsa and guacamole.

Fritos Taco Bowl

Ingredients:
  • 1 pound ground turkey
  • 1/2 cup chopped yellow onion
  • 2-16 ounce cans chili beans
  • 8 ounce can tomato sauce
  • 10 ounce can diced tomatoes with chilies
  • 1 cup frozen corn
  • 1 ounce taco seasoning
  • 14 ounce bag Fritos
  • 6 cups cooked rice
Toppings
  • sour cream
  • guacamole
  • taco sauce or salsa
  • cheddar cheese
Crock Pot Directions:
  1. In a skillet, over medium heat, cook the turkey and onions, until the onions are soft and the turkey is completely cooked, breaking it up as it cooks.
  2. Transfer the mixture to a crock pot and add in the beans, tomato sauce, diced tomatoes, corn and taco seasoning. Stir to mix well.
  3. Cover the crock pot and cook on high for 2-4 hours or low for 5-6 hours.
Skillet Directions
  1. In a skillet, over medium heat, cook the turkey and onions, until the onions are soft and the turkey is completely cooked, breaking it up as it cooks.
  2. To the skillet, add in the beans, tomato sauce, diced tomatoes, corn and taco seasoning. Stir to mix well.
  3. Simmer the mixture for 20 minutes, stirring occasionally.
Assembly
  1. Place some Fritos into the bottom of a bowl and topped with some rice, followed by some of the meat/bean mixture. Top with your desired toppings.

Notes:
I used brown rice in this dish but you can use your preferred type of rice.

I used ground turkey, but you can use ground beef instead.
