One of these days I really want to try and make cannoli's, shells and filling from scratch. Until then I will continue to make recipes inspired by cannoli's.
These pancakes are absolutely delicious. I choose to top them with powdered sugar because cannoli's are usually dusted with powdered sugar.
Cannoli Pancakes
Ingredients:
- 1 cup all purpose flour
- 2 tablespoons powdered sugar
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1 cup ricotta cheese
- 3/4 cup milk
- 2 eggs
- 2 teaspoons fresh orange zest
- 1 teaspoon vanilla extract
- 3/4 cup mini chocolate chips
- powdered sugar
Directions:
- In a large bowl whisk, together the flour, sugar, baking powder and cinnamon.
- In a medium bow, whisk together the ricotta cheese, milk, eggs, orange zest and vanilla until well combined.
- Make a well in the middle of the dry ingredients and pour the wet ingredients into the well. Whisk just until combined.
- Stir in the chocolate chips.
- Melt a bit of butter, over medium heat, in a large skillet or on a large griddle.
- Pour 1/3 cup of batter onto the hot griddle or skillet and cook for 2-3 minutes or until golden brown and bubbles start to form and pop on top. Flip the pancakes and cook for an additional 2-3 minutes or until golden brown and cooked through.
- Top with powdered sugar.
Notes:
If your ricotta cheese has some liquid to it you will want to drain it before adding it with the wet ingredients. My cheese did not have any liquid to it so I did not have to drain it.
I got 9 pancakes out of this batter. You can easily double this recipe if you want/need more pancakes.
