Bacon Stuffed French Toast

Bacon Stuffed French Toast: Savory Sweet and Satisfying

My oldest daughter loves bacon! However, she loves bacon plain. Every time I use bacon in a breakfast dish like this one she says "Why did you have to ruin bacon?". Oh, that kid!

Even though she did not like the bacon in the french toast and separated everything to eat it, she still enjoyed it. The rest of us enjoyed it with the bacon in the french toast.

This french toast has the perfect texture, crispy on the outside and soft on the inside. Pair that with the sweet cream cheese and salty bacon and you have a super delicious breakfast.

Bacon Stuffed French Toast

Ingredients:

  • 6 ounces cream cheese, softened
  • 8 tablespoons packed brown sugar
  • 8 slices texas toast
  • 12 slices bacon, cooked
  • 4 eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 4 teaspoon unsalted butter
  • 1 tablespoon canola oil

Directions:

  1. In a medium bowl, beat together the cream cheese and brown sugar.
  2. Spread the cream cheese mixture onto the bread slices.
  3. Place 3 slices of bacon onto the cream cheese side of 4 slices of bread, breaking the bacon as needed to fit.
  4. Place the other piece on bread on top of the bacon, cream cheese side down on the bacon.
  5. In a large baking dish, whisk together the eggs, milk and vanilla extract.
  6. Dip each side of the French toast sandwiches into the egg mixture and allow to soak for 1-2 minutes. You do not want the gg mixture to reach the bacon or it will become soggy.
  7. In a large skillet, add the butter and oil. Heat over medium heat until the butter has melted.
  8. Right after dipping the sandwiches, add them to the hot skillet and cook until golden brown, flip the sandwiches and cook on the other side until golden brown, adding more butter and oil to the pan as needed.
  9. Dust the French toast sandwiches with powdered sugar and serve immediately.

I used turkey bacon.
