Angry Chicken Alfredo


Sometime ago Olive Garden came out with an Angry Alfredo Dip. I decided to take the idea of the spicy Alfredo dip and turn it into a fettuccine Alfredo.


It turned out just how I wanted it to, delicious Alfredo with a little bit of a kick. As with most spicy things everyones tastes are different. I prefer things a bit more spicy where as other may not, so I added more red pepper flakes.

Angry Chicken Alfredo

Ingredients:

  • 16 ounces fettuccine noodles
  • 1 cup unsalted butter
  • 4 cups heavy cream
  • 1 cup shredded parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2-3/4 teaspoons red pepper flakes
  • 16 ounces boneless skinless chicken breasts
  • black pepper, to taste
  • 2 tablespoon olive oil
  • 1 cup mozzarella

Directions:

  1. Cook the pasta according to the package directions and drain.
  2. In a large saucepan, heat the butter over medium-high heat and melt completely, but do not let brown.
  3. Stir in the heavy cream and stir constantly until the mixture begins to boil.
  4. Add in the cheese and continue to stir until the cheese is completely melted and the sauce has thickened.
  5. Reduce the heat to a simmer and stir in the garlic powder and red pepper flakes.
  6. While preparing the sauce also prepare the chicken. In a large skillet heat the olive oil over medium-high heat.
  7. Season both sides of the chicken with black pepper and add to the hot skillet. Cook for 5-10 minutes on each side or until the chicken is completely cooked.
  8. Allow the chicken to rest for a few minutes and then slice into bite sized pieces.
  9. Combine the pasta, Alfredo sauce and chicken, tossing to coat everything well.
  10. Transfer the pasta to a 9x13 inch baking dish and sprinkle the mozzarella cheese over top.
  11. Place the baking dish under the broiler and allow the cheese to brown. Once the cheese begins to brown remove the baking dish from the oven.
