Crock Pot Sausage Potato Soup: Savory Sweet and Satisfying

Soup season, as my husband calls fall and winter, is one of the only reasons I can tolerate the cold weather. Soup is so warm and comforting and it makes the cold weather not so bad for a few minutes.

This soup is not only warm and comforting but it is flavorful and creamy. I choose to leave the sausage grease in the soup, my sausage did not produce a ton of grease and I wanted the extra flavor it would provide. Plus I have a crock pot where I can use it as a stove top and crock pot and I did not want to try and drain the grease from it. You can drain the grease if that is your preference or you do not want the look of the grease in the soup.

Crock Pot Sausage Potato Soup

Ingredients:

  • 1 pound hot Italian sausage
  • 1/2 medium yellow onion, finely diced
  • 2 pounds russet potatoes, diced into 1/2 inch cubes
  • 3 garlic cloves, minced
  • 8 ounces tomato puree
  • 1 teaspoon Italian seasoning
  • black pepper, to taste
  • 14.5 ounce can petite diced tomatoes
  • 4 ounces cream cheese, cubed
  • 1 cup low sodium chicken broth
  • 1 cup heavy cream
  • 1/4 cup shredded parmesan cheese

Directions:

  1. In a skillet over medium-high heat, cook the sausage until completely cooked and crumbled.
  2. Transfer the sausage to the crockpot.
  3. Add in the onion, potatoes, garlic, pureed tomatoes, Italian seasoning, black pepper, tomatoes, cream cheese and chicken broth. Stir to combine.
  4. Cover the crock pot and cook on low for 5-6 hours or high for 3-4 hours.
  5. 30 minutes before the soup is done cooking stir in the heavy cream and parmesan cheese. Replace the lid and continue to cook for the last 30 minutes before serving.

Notes:
You can substitute sweet Italian sausage for the spicy if you do not want a little bit of heat in your soup.
