Red Pepper Hummus


My kids do not like bell peppers. No mater how small I dice them they always seem to find them. I realized because of this I have never made red pepper hummus. They like hummus, but because it has red peppers in it they don't like it. But that is okay with me, that just means more of this creamy hummus for me.

Red Pepper Hummus

Ingredients:

  • 2 red bell peppers
  • 1/4 cup tahini
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 1 garlic clove, roughly chopped
  • 15 ounce can chick peas, drained and rinsed, reserving the liquid
  • pinch cayenne pepper

Directions:

  1. Move the top oven rack about 5 inches below the broiler and turn on the broiler.
  2. Cut the peppers in half and remove the seeds and white ribs.
  3. Place the peppers on a baking sheet skin side up and broil for 5-10 minutes or until the skin is charred.
  4. Place the peppers into a resealable plastic bag or container and then seal. Let sit for 10-15 minutes or until cool enough to handle.
  5. Remove the peppers and peel the charred skin and discard. Roughly chop the peppers.
  6. In the bowl of a food processor add the tahini and lemon juice and process for 1 minute. Scrape the sides and process for an additional 30 seconds.
  7. Add in the olive oil and minced garlic. Process for 30 seconds, scrape the sides of the bowl and process for an additional 30 seconds or until well blended.
  8. With the food processor running, add in the chickpeas a handful at a time, processing well after each addition. After all of the chickpeas have been added, process for 2 minutes.
  9. Add in the roasted peppers and cayenne pepper and process for 2 minutes.
  10. If the hummus is too thick add in 1-2 tablespoons of the reserved chickpea liquid until the desired consistency is reached.
  11. Transfer the hummus to a container, cover and refrigerate overnight.

Notes:
If you want to garnish the hummus with red pepper, reserve some of the red pepper to finely dice and add to the top of the hummus before refrigerating.
