Lemon Raspberry Coconut Overnight Oats: Savory Sweet and Satisfying

I had bought some lemon curd for a recipe and was trying to find ways to use it up, when I came across this recipe for overnight oats. Lemon curd in overnight oats with raspberries and coconut is very delicious.

Now I am thinking about all of the other possible combinations for lemon curd and berries in overnight oats.

Lemon Raspberry Coconut Overnight Oats

Ingredients:

  • 1/2 cup old fashioned rolled oats
  • 2 tablespoons shredded coconut
  • 1/3 cup milk
  • 1/3 cup nonfat Greek yogurt
  • 1/4 cup frozen or fresh raspberries
  • 2 tablespoons lemon curd

Directions:

  1. In a small bowl stir together the oats, coconut, milk and Greek yogurt.
  2. In a jar or sealable bowl spread 1 tablespoon of lemon curd.
  3. Place half of the oat mixture on top of the lemon curd followed by half of the raspberries.
  4. Place the remaining lemon curd on top of the raspberries followed by the remaining oat mixture and remaining raspberries.
  5. Seal the container or jar and refrigerate overnight.
