I had bought some lemon curd for a recipe and was trying to find ways to use it up, when I came across this recipe for overnight oats. Lemon curd in overnight oats with raspberries and coconut is very delicious.
Now I am thinking about all of the other possible combinations for lemon curd and berries in overnight oats.
Lemon Raspberry Coconut Overnight Oats
Ingredients:
- 1/2 cup old fashioned rolled oats
- 2 tablespoons shredded coconut
- 1/3 cup milk
- 1/3 cup nonfat Greek yogurt
- 1/4 cup frozen or fresh raspberries
- 2 tablespoons lemon curd
Directions:
- In a small bowl stir together the oats, coconut, milk and Greek yogurt.
- In a jar or sealable bowl spread 1 tablespoon of lemon curd.
- Place half of the oat mixture on top of the lemon curd followed by half of the raspberries.
- Place the remaining lemon curd on top of the raspberries followed by the remaining oat mixture and remaining raspberries.
- Seal the container or jar and refrigerate overnight.
