Oatmeal can taste really good, you just have to add the right ingredients. Like cherries, chocolate and coconut. I love trying different flavors of oatmeal. I feel healthy for eating oatmeal, but also feel like I'm indulging a little bit with oatmeals like this.
You can use your favorite type of chocolate chips in this oatmeal, I used dark chocolate chips because those are one of my favorite and I knew dark chocolate and cherries would make a fantastic pairing.
This oatmeal did not disappoint. We all loved every bite of it and my girls have already request I make it again soon.
Chocolate Cherry Baked Oatmeal
Ingredients:
- 1 egg
- 1/3 cup brown sugar
- 1 cup milk
- 1 banana, mashed
- 2 cups old fashioned rolled oats
- 1 teaspoon baking powder
- 1 cup frozen cherries, quartered
- 1/2 cup chocolate chips
- 1/3 cup shredded coconut
Directions:
- Preheat the oven to 350º F. Spray a 8x8 baking dish.
- In a large bowl whisk together the egg, sugar, milk and mashed banana.
- Add in the oats and baking powder and stir until well mixed.
- Fold in half of the cherries, chocolate chips and coconut.
- Transfer the mixture to the prepared baking dish and sprinkle the remaining cherries, chocolate chips and coconut on top.
- Bake for 30 minutes or until the oatmeal has absorbed the liquid and is set.
