Bacon Wrapped Chicken with Jalapeño Cream Sauce: Savory Sweet and Satisfying

Whenever I wrap chicken in bacon it never seems to go exactly right. I can never seem to get the bacon wrapped around the chicken they way it looks in the recipe picture. Plus when turning the chicken it never seems to stay wrapped. Despite the troubles I've had with bacon wrapped chicken, this recipe turned out delicious and I did not care how it looked and would make it again.

Bacon Wrapped Chicken with Jalapeño Cream Sauce: Savory Sweet and Satisfying

Bacon wrapped around chicken is delicious on its own, but when combined with a creamy jalapeño sauce, it is even better. I did not serve the chicken and sauce over anything, the sauce is thick and worked well on top of the chicken. However, I also think it would taste great served over pasta or rice.

Bacon Wrapped Chicken with Jalapeño Cream Sauce/p>

Ingredients:

  • 2 boneless skinless chicken breasts
  • 8 slices bacon
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh ground black pepper
  • 3 tablespoons unsalted butter
  • 1 cup heavy whipping cream
  • 1/2 cup half and half
  • 2 jalapeños, roughly chopped
  • 2 cloves garlic
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1 cup shredded parmesan cheese

Directions:

  1. Slice the chicken breasts in half horizontally, creating 4 chicken breasts.
  2. Wrap 2 slices of bacon around each chicken breast trying to keep the ends of the bacon on the same side of the chicken. Season with garlic powder and black pepper.
  3. Melt the butter in a large skillet, over medium-high heat.
  4. Add in the chicken and cook for 5 minutes on each side until the bacon is crispy and the chicken is completely cooked. Remove the chicken from the skillet and set aside.
  5. While the chicken is cooking, in a blender or food processor, blend the heavy cream, half and half, jalapeños, garlic, garlic powder and cayenne pepper until well blended.
  6. Once the chicken has been removed, pour the sauce into the same skillet and cook over medium heat for 5 minutes, stirring often.
  7. Add in the parmesan cheese and stir until completely melted and combined.
  8. Add the chicken back to the skillet.

Notes:
I used turkey bacon. You can use the bacon of your choice, just make sure it is cut on the thicker side.
