Sausage Cheese Potato Soup

Sausage Cheese Potato Soup: Savory Sweet and Satisfying


This soup is creamy, cheesy and downright delicious. It does require you to multitask and you will have three burners going at the same time on the stove, but the work is so worth it.

I used spicy sausage in this soup and it did not add that much spiciness. In fact my youngest who does not like any sort of spiciness, ate it and loved it. But you could always use mild or sweet Italian sausage instead.

Sausage Cheese Potato Soup

Ingredients:

  • 3 1/2 cups low sodium chicken broth
  • 1 1/2 pounds red potatoes, peeled and cut into bite sized pieces
  • 1 cup celery, diced
  • 1 cup carrots, sliced
  • 1/2 cup diced yellow onions
  • 1/2 teaspoon black pepper
  • 3 hot Italian sausage links
  • 1/2 cup unsalted butter
  • 1/2 cup all purpose flour
  • 4 cups half and half
  • 16 ounces shredded sharp cheddar cheese

Directions:

  1. In a large pot add in the chicken broth, potatoes, celery, carrots, onions and black pepper and stir to combine.
  2. Bring the mixture to a simmer and allow to simmer until the vegetables are tender, about 15-20 minutes, depending on the size of the vegetables.
  3. In a skillet, over medium high heat, cook the sausage until completely cooked. Set aside.
  4. While the vegetables are simmering and sausage is cooking, in a medium pot, over medium heat, melt the butter.
  5. Once the butter has melted, whisk in the flour and continue to whisk until completely combined and smooth and lightly brown.
  6. Slowly add in the milk, while whisking constantly. Whisk until the mixture has thickened slightly.
  7. Add in the cheese and stir to mix, until completely melted and combined. Remove from the heat.
  8. Once the vegetables are tender, add the cheese sauce to the pot with the broth and vegetables. Stir to combine well.
  9. Slice the cooked sausage and add to the soup. Stir to combine.
  10. Serve immediately and garnish with shredded cheese and chopped green onions if desired.
