My freezer probably has about a dozen bananas in it waiting to be used. My kitchen counter had four bananas needing to be used up. So sheet pan pancakes with bananas and dark chocolate chips was they way to go. At least I was able to use 2 bananas and only had to add two to my freezer instead of four.
The chocolate chips in these pancakes sank to the bottom, which wasn't ideal, but it still tasted delicious. It had was kind of like a chocolate crust to the pancakes.
Sheet Pan Banana Dark Chocolate Chip Pancakes
Ingredients:
- 4 cups all purpose flour
- 3 tablespoons baking powder
- 2 teaspoons baking soda
- 3 tablespoons granulated sugar
- 4 eggs
- 4 cups milk
- 4 tablespoon unsalted butter, melted and slightly cooled
- 1-2 bananas, sliced
- 3/4 cup dark chocolate chips
Directions:
- Preheat the oven to 425º F.
- Line a 18x13 inch baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda and granulated sugar.
- Add in the eggs, milk and butter.
- Whisk until mixed.
- Pour the batter into the prepared baking sheet and spread to cover the entire baking sheet.
- Place the bananas and chocolate chips on top of the batter.
- Bake for 15 minutes or until golden brown. Be careful not to over bake.
Notes
Depending on how much banana you want in your pancake and how big your bananas are you can use 1 banana or up to two bananas.
