Homemade Butterscotch Pudding

Butterscotch Pudding: Savory Sweet and Satisfying

Homemade pudding is so much better than any store bought I have ever had. However, when it comes to the butterscotch flavor this does not taste like the store bought kind, but it does taste really, really delicious. We all described the taste of this pudding as a combination of caramel and butterscotch. My whole family loved this pudding, even my husband who is a huge pudding fanatic.

Homemade Butterscotch Pudding

Ingredients:

  • 3/4 cup dark brown sugar
  • 3 tablespoons cornstarch
  • 2 cups milk
  • 1/2 cup heavy whipping cream
  • 5 tablespoons unsalted butter
  • 1 1/2 teaspoons vanilla extract

Directions:

  1. In a medium pot, whisk together the brown sugar and cornstarch.
  2. Slowly pour the milk in while whisking constantly.
  3. Stir in the heavy cream and heat over medium-low heat.
  4. Cook stirring constantly until the pudding comes to a simmer and has thickened, about 5-10 minutes.
  5. Remove the pot from the heat and whisk in the butter and vanilla extract. Continue to whisk until the butter has completely melted and has been fully incorporated.
  6. Transfer the mixture to a sealable container or several small containers and refrigerate until cold.
Enjoy!!!

Notes:
I used low fat milk.
