Now that fall has arrived, or should I say winter. I feel like we just went from summer temperatures to winter temperatures. But now that the cooler temps are here it is time for some warm oatmeal for breakfast.
When making oatmeal for the whole family I prefer to make baked oatmeal. It is easy to put together and then I do not have to worry about making individual bowls. Plus with delicious flavors like apples and raspberries nobody complains.
Raspberry Apple Baked Oatmeal
Ingredients:
- 1 cup milk
- 1/2 cup honey
- 1/4 cup plain greek yogurt
- 1 egg
- 1 teaspoon vanilla extract
- 2 cups old fashioned oats
- 1 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 1/2 cups finely diced apples
- 1 cup frozen raspberries
Directions:
- Preheat the oven to 350º F. Spray an 8x8 baking dish with cooking spray.
- In a medium bowl whisk together the milk, honey, yogurt, egg and vanilla.
- In a large bowl stir together the oats, baking powder and cinnamon.
- Pour the wet ingredients over the oat mixture and gently stir until everything is well combined.
- Gently stir in the fruit.
- Transfer the mixture to the prepared baking dish and spread into an even layer. Place a few raspberries on top.
- Bake for 45 minutes.
Notes:
I like pour milk over top of my baked oatmeal.
