Mmm, cannoli's are so delicious. Definitely a favor dessert of mine. Well, this pie takes the best part of a cannoli, the filling, and turns it into an easy no bake pie.
With this pie I made a homemade graham cracker pie crust, but you could make the pie even easier by using a store bought graham cracker pie crust.
No-Bake Cannoli Cream Pie
Ingredients:
- 1 1/2 cups graham crackers crumbs
- 5 tablespoons unsalted butter, melted
- 4 tablespoons granulated sugar
- 8 ounce package cream cheese, softened
- 1 teaspoon pure vanilla extract
- 1 1/2 cups heavy cream
- 1 cup whole milk ricotta
- 3/4 cup confectioners sugar
- dash ground cinnamon
- 1/2 cup mini chocolate chips, plus more for the top
- 1/2 cup heavy cream
- 2 tablespoons confectioners sugar
Directions:
- Preheat the oven to 350º F. Spray a 9-inch pie plate with cooking spray.
- In a large bowl combine the graham cracker crumbs, melted butter and sugar until well mixed.
- Transfer the mixture to the prepared pie plate and press into the bottom and up the sides of the pie plate.
- Bake for 8 minutes or until lightly browned.
- Cool completely before adding the filling.
- In a large bowl beat the cream cheese until smooth and creamy.
- Add in the heavy cream and beat on high speed until the mixture thickens and forms soft peaks.
- Add in the ricotta, confectioners sugar and cinnamon. Mix on medium speed until well blended.
- Fold in 1/2 cup chocolate chips.
- Transfer the mixture to cooled crust and spread into an even layer.
- Refrigerate overnight.
- In a medium bowl, using a whisk attachment, beat the heavy cream until soft peaks form.
- Add in the confectioners sugar and beat until mixed and stiff peaks start to form.
- Spread the whipped cream on top of the pie and sprinkle with desired amount of mini chocolate chips.
