No Bake Cannoli Cream Pie: Savory Sweet and Satisfying

Mmm, cannoli's are so delicious. Definitely a favor dessert of mine. Well, this pie takes the best part of a cannoli, the filling, and turns it into an easy no bake pie. 


With this pie I made a homemade graham cracker pie crust, but you could make the pie even easier by using a store bought graham cracker pie crust.

No-Bake Cannoli Cream Pie

Ingredients:

  • 1 1/2 cups graham crackers crumbs
  • 5 tablespoons unsalted butter, melted
  • 4 tablespoons granulated sugar
  • 8 ounce package cream cheese, softened
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups heavy cream
  • 1 cup whole milk ricotta
  • 3/4 cup confectioners sugar
  • dash ground cinnamon
  • 1/2 cup mini chocolate chips, plus more for the top
  • 1/2 cup heavy cream
  • 2 tablespoons confectioners sugar

Directions:

  1. Preheat the oven to 350º F. Spray a 9-inch pie plate with cooking spray.
  2. In a large bowl combine the graham cracker crumbs, melted butter and sugar until well mixed.
  3. Transfer the mixture to the prepared pie plate and press into the bottom and up the sides of the pie plate.
  4. Bake for 8 minutes or until lightly browned.
  5. Cool completely before adding the filling.
  6. In a large bowl beat the cream cheese until smooth and creamy.
  7. Add in the heavy cream and beat on high speed until the mixture thickens and forms soft peaks.
  8. Add in the ricotta, confectioners sugar and cinnamon. Mix on medium speed until well blended.
  9. Fold in 1/2 cup chocolate chips.
  10. Transfer the mixture to cooled crust and spread into an even layer.
  11. Refrigerate overnight.
  12. In a medium bowl, using a whisk attachment, beat the heavy cream until soft peaks form.
  13. Add in the confectioners sugar and beat until mixed and stiff peaks start to form.
  14. Spread the whipped cream on top of the pie and sprinkle with desired amount of mini chocolate chips.
