Finally, coffee cake now has coffee in it! I have always felt the need to have a coffee cake recipe that has coffee in it. It is right there in the name "coffee" cake. This coffee cake is very delicious, plus it has white chocolate in it making it even more delicious.
Chocolate Espresso Coffee Cake
Ingredients:
- 1 1/2 cups all purpose flour
- 3/4 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1 tablespoon + 1 teaspoon espresso powder
- 12 tablespoons unsalted butter, room temperature
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 egg
- 1 egg yolk
- 6 ounces Greek vanilla yogurt
- 4 ounces white chocolate chips
Directions:
- Preheat the oven to 325º F. Spray a 8x8 baking pan with cooking spray and line with parchment paper.
- In a medium bowl whisk together the flour, baking soda, baking powder and espresso powder. Set aside.
- In the bowl of a stand mixer, beat together the butter and sugar until light and fluffy.
- Add in the vanilla and 1 egg and mix well, scraping down the bowl as needed.
- Add in the 1 egg yolk and mix on high until the mixture is light and airy.
- Add in half of the yogurt and half of the flour mixture. Mix on low until everything is well mixed.
- Scrape down the sides of the bowl and add the remaining yogurt and flour mixture. Mix again on low until well combined.
- Fold in the white chocolate chips.
- Transfer the batter to the prepared baking pan and spread into an even layer.
- Bake for 55-60 minutes or until an inserted toothpick comes out with just a few moist crumbs.
- Cool for 1 hour in the pan, then remove the coffee cake from the pan and serve.
